HOMEMADE CALIFORNIA ROLL RECIPE

The California roll recipe one of the most common forms of sushi in the US market. The California roll has been dominant in sushi’s global acclaim and in encouraging sushi chefs around the world in building their non-traditional fusion cuisine.

Ingredients for California roll recipe

2 cups uncooked white rice
½ cup seasoned rice vinegar
4 cups water
1 teaspoon white sugar
1 tablespoon mayonnaise
1 avocado
1 teaspoon salt,
5 sheets nori (dry seaweed), sliced
¼ cup red caviar, such as tobiko
2 tablespoons drained pickled ginger, for garnish
1 English cucumber seeded and sliced into strips
2 tablespoons soy sauce,
¼ pound cooked crab meat, remove the excess liquid and shredded.
Directions

Enclose a sushi rolling mat entirely in plastic wrap and set aside.
Add water and rice in the saucepan, and place over high heat. Allow it to boil. Lower the heat to moderate, lid, and cook till the rice is soft and let the liquid be absorbed or dried for about 20 to 25 minutes. Remove rice and put in a bowl and cut in rice vinegar using a rice paddle or wooden spoon. Flavour with one teaspoon sugar and one teaspoon salt, or to taste. Leave it to cool to room temperature, for about 30 minutes.
Mix crab meat with mayonnaise in another small bowl.
Put a sheet of nori on a flat work surface. Sprinkle a thin layer of rice on top of the nori. Set the nori, rice side down, on the prepared rolling mat. Add 2 to 3 avocado slices on top of the nori in one layer. Garnish with 2 to 3 tablespoons of the crab combination. Spoon 1 to 2 teaspoons tobiko longitudinally on one side of the avocado-crab mixture, and two cucumber strips on the other side. Using the mat as a guide, gently roll the California roll into a tight log. Separate the rolling mat. Garnish roll with more of tobiko, envelope with a plastic wrap and gently press the tobiko into the top of the roll. Use a wet knife to divide the roll into six even sections. Repeat the process for the remaining sheets of nori and filling. This California roll is similar to that of Egg roll.
Garnish with pickled ginger, wasabi paste and soy sauce. It is ready to serve.
